— A vegan is a vegan, a vegetarian is a vegetarian, and a gluten-free is a gluten free.
The question is, how do you find those definitions?
That’s the question the chefs of a restaurant in Bend, Oregon, are trying to answer.
The restaurant serves a “meatless” menu, a chef told CNN affiliate KOMO-TV, and that’s the only meat option available.KOMO reporter Dan O’Malley reported on Monday that the restaurant, called “The Kitchen,” serves meatless options.
One is a salad with a side of ground turkey.
Another is a grilled chicken burger.
The chicken burger is grilled over a charcoal grill, while the grilled chicken salad is served on a bed of broccoli.
Komosource also spoke with the owner of the restaurant and it was reported that they are looking into the concept of a meatless menu.
“We’ve got some gluten-containing products, but we are not gluten-based,” a chef said.
“We’ve never had a gluten problem in the restaurant before.”
A vegetarian can opt for a chicken or beef burger, but not both.
The menu does not specify gluten-type foods, but KOMOsource noted that one of the menu items is “Vegetarian and vegan options.”
“We’re trying to make the vegan experience a little more appealing,” chef Chris Lattman told CNN.
“You can’t just have vegetarian and vegan.”
According to the menu, meatless food is served at the restaurant for a $2.99 minimum order and a $5.99 per person charge.
But the menu does include some meat options, including burgers and salads.
Lattman said that the menu item on the menu is not a vegan burger.
“It’s a meat burger, and it’s a veggie burger,” Lattmann said.
But he added that if you order meat and a salad, the price tag for the veggie option goes up to $5 per person.
He said that if they were going to include all of the options on the vegetarian menu, it would add up to about $10 per person.
“I think it’s going to be a lot of people, not just the vegetarians, but vegans, that are going to want to try it,” Lettman said.
He said the idea is to try to make it appealing for people who don’t typically go to restaurants.
“I think the vegans are going, I guess, to try and get a little bit of everything.
I don’t know that that’s going the best for everybody,” he said.
Lettman told KOMOSource that he’s been looking into what his restaurant would look like with a meat-free menu.
He believes that the vegetans can find it appealing.
“My goal is that it would be a great place for a vegan to go,” Littman said, adding that it’s also a place where people can be more accommodating to others.
“If we could do it on the vegan menu, the vegetals would be happy to be there, and they’d be happy with the price and the service,” he added.
“What we’re trying [to do] is to make a space where people feel comfortable, where people who want to be vegetarian can come and feel like they’re part of something,” he told KOS.
“And we don’t want to do that by creating a situation where everyone’s uncomfortable, or where everyone is not comfortable.”
The menu includes a vegan side salad, which is also a vegan option, as well as chicken and beef burgers.
The salads come with lettuce, tomato, onions, and tomato sauce.
There are also some side items, such as roasted cauliflower.
Littman and the other chefs at The Kitchen said that they plan to serve a vegan menu at other restaurants in the city.
“There’s definitely some overlap, but it’s really just a matter of how we think about it,” he explained.
“What we do, we do with the menu and what we want to serve.
That’s our mission.”
